Tarts and Custards
In this class you will learn how to make three types of French tart dough (pâte brisée, pâte sablée, and pâte sucrée) and match them with the classic custards: lemon, chocolate, and the famous pastry cream (crème pâtissière). These tarts are so delicious, you will want to make them for every occasion!
You will also learn how to adapt these tarts to various food sensitivities, how to prepare dough in batches and store for later use, and how to blind bake correctly, among other useful techniques.
The class is 2 hours long, hands-on, and limited to 4 people.
